Ingredients

For the beef:

400g diced beef

240g kidney beans (drained)

4 tsp Caribbean BBQ jerk rub

1 tbsp olive oil

3 tbsp honey

Half zested lemon

4x fresh white tortilla wraps

1x large, ripe avocado

 

For the mango salsa:

1/2 mango chopped into cubes

1/2 finely diced red onion

2 tbsp chopped fresh coriander

1 tbsp lime juice

Method

For the beef mix:

Step 1:

In a mixing bowl, add the Caribbean BBQ jerk rub, olive oil, honey and lemon and stir.

Step 2:

Add the diced beef and coat evenly with the marinade. Leave to stand for 12 – 24 hours.

Step 3:

Heat a large frying pan on a medium flame. Add the diced beef and kidney beans. Fry for 10 minutes, turning regularly.

Step 4:

Add the mix to your tortilla wrap along with fresh avocado and the mango salsa (below).

For the mango salsa:

Step 1:

Combine all ingredients and mix in a bowl.
