1 large aubergine, sliced into 1 cm-thick rounds

2 tbsp plain flour

2 tbsp cornstarch

2 tsp ground cumin

1 tsp chilli powder

A pinch of wild herb cooking seasalt

Cooking oil

Spring onions for garnish (optional)

Method

A quick and easy side dish of fried Aubergine

Step 1:

Mix the flour, cornstarch, cumin and chilli powder in a dish.

Step 2:

Add a glug of cooking oil to a frying pan until it covers the bottom. Heat on a medium flame.

Step 3:

Add a handful of aubergine slices to the flour mix until well coated. Shake off any excess flour and transfer to the frying pan. Fry until golden brown, around 2 minutes on each side. 

Step 4:

Continue until all the aubergine slices have been fried (you may need to top up the oil as the aubergine will soak it up). 

Step 5:

Garnish with chopped spring onions and a pinch of wild herb cooking seasalt.
