1 tbsp olive oil

½ small onion, finely diced

2 cloves garlic, minced

1 can pinto beans, drained and rinsed

100 ml water

1 tsp lime juice

½ tsp chilli powder

¼ tsp ground cumin

1 tsp Epazote Leaves

Method

Refried beans, if you’re looking for a simple, delicious and cost-effective way to make Mexican refried beans, this is the recipe for you.

Step 1:

In a saucepan, heat the olive oil over a medium flame. Add the onions and cook for around 5 minutes until translucent, stirring occasionally.

Step 2:

Add the chilli powder, cumin and Epazote Leaves, and mix well.

Step 3:

Add the garlic and cook for a further 30 seconds.

Step 4:

Add the beans and water, stir, cover and cook for 5 minutes.

Step 5:

Remove the lid, lower the heat and mash the beans with the back of a fork until mushy

Step 6:

Remove from the heat and stir in the lime juice before serving.
