Filé Powder has a subtle flavour with tart, citrus notes. The powder is made from young leaves of the Sassafras Albidum tree and features within Louisianan and Creole Cuisine. The sassafras tree itself can grow up to 60 feet tall and has distinctive mitten-shaped leaves that turn brilliant colours in the fall.
File powder has been used by Native American tribes for centuries, particularly the Choctaw, as a seasoning and a medicine. This is where the word “file” comes from – the Choctaw word “hshikalaha,” meaning “sassafras.”
Filé is most commonly used to prepare Gumbos, where it adds essential flavour and texture. The powder is always added once the meat or vegetables have finished cooking for a more intense taste!
The use of file powder in Cajun and Creole cooking dates back to the 19th century, when it was used as a substitute for okra in gumbo during times when okra was not in season.
