Rogan Josh is a spicy Indian blend, used to make the authentic Indian curry Rogan Josh. The dish originates from the Kashmir region, where the curry goes by the names of Roghan Josh or Roghan Ghosht.
The curry can be one of the dishes in the multicourse meal called Wazwan. This is the preparation of 7 meat dishes that are considered an art form. They illustrate a point of pride within Kashmiri culture.
Rogan Josh was authentically prepared with pieces of red meat, usually lamb or mutton. They were served with an intensely, heavily spiced gravy with a base of garlic, ginger and onions. Since then, it has evolved to include other cuts of meat such as chicken, pork and beef.
