Ingredients

  • Black Peppercorns (to taste)
  • Cayenne Pepper (1 tsp)
  • Creole Spice Blend (3 tsp)
  • Garlic Clove (2 crushed)
  • Olive Oil (175 ml / 6 fl oz)
  • Red Wine Vinegar (60 ml / 2 fl oz)
  • Sea Salt (a pinch)
  • Tabasco (dash to taste)
  • Wholegrain Mustard (3 tsp)

Method

1) Mix all ingredients except the oil together in a bowl.

2) Gradually whisk in the oil (will keep for up to ten days in an airtight container in the fridge.)
