Creamy Chicken Pasta With Tomato Bruschetta

Feel free to customise this recipe. Stick to the base of oats, seeds, oil, maple syrup and honey but add whatever flavourings you want. Substitute the cinnamon with vanilla, mixed pudding spice or nutmeg.
2 tablespoons of vegetable oil or coconut oil
120ml maple syrup
1 tablespoon runny honey
2 teaspoons cinnamon
250g rolled oats
4 tablespoons of Knead the Seed 5 or Knead the Seed 8
50g chopped nuts
75g dried fruit
25g coconut flakes
Heat oven to 150C gas 2.
Combine the oil, maple syrup, honey and cinnamon in a large bowl. Tip in the knead the seed mix of choice, oats and chopped nuts then mix well.
Tip and spread the granola onto two lined baking trays. Bake in the oven for 10 minutes.
After 10 minutes remove the trays and mix in the dried fruit and coconut. Then bake for a further 10 minutes.
Remove the baking pans from the oven and scrape onto a flat surface to cool and get crunchy.
Serve with cold milk or yogurt and fresh fruit!
