Mediterranean Chorizo Pasta

8 slices of toast (sourdough works best)
120g cream cheese
2 garlic cloves, finely chopped
63ml extra-virgin olive oil, plus 4 tsp
1 lemon, juiced
250g tomatoes, quartered
4 tsp Dukkah Spice Mix
1 handful of fresh basil, chopped
Add the cream cheese, garlic, 63ml olive oil, lemon juice, ½ tsp salt and ¼ tsp pepper to a bowl and stir until well-combined. Set aside.
In a wok, heat 2 tsp of olive oil over a high heat. Add the tomatoes and cook for 1 minute without stirring. Once they’re lightly charred, remove from the heat and transfer to a bowl.
Add 2 tsp of olive oil and a pinch of salt and pepper to the tomatoes, stir to combine and set aside.
Slice the avocado into a bowl and add the Dukkah Spice Mix and combine. Set aside.
Spread each slice of toast with the cream cheese, then top with avocado and tomatoes. Sprinkle with the basil and serve.
