2 tablespoons Olive oil

1 Small onion (diced)

2 Garlic cloves (minced)

400g Red kidney beans (drained)

2 teaspoons Central American Spice Mix

4 Eggs

4 Small flour tortillas (warmed)

1 Large tomato (diced)

1 handful Pickled jalapeño peppers (roughly chopped)

Step 1:
In a large pan heat 1 tbsp oil and add onions with a pinch of salt, cook until soft. Add the garlic and cook for 1 minute.

Step 2:
Stir in the beans and the Central American Spice Mix. Add 75ml water and cook for 5-7 mins. Roughly mash the beans and remove from pan.

Step 3:
Heat remaining oil over medium-high heat and cook the eggs. To assemble, spread the beans onto the tortillas, add toppings such as chopped tomatoes, jalapenos and cheese.

*Top with guacamole, lime juice and a fried egg, then scatter with coriander.*
