1kg Granny Smith apples (peeled, cored and cut into chunks)
500g eating apples (peeled, cored and cut into chunks)
100 g golden caster sugar
30g soft light brown sugar
50g butter unsalted (cubed)
50g Rolled oats
50g plain flour
25g flaked almonds
1 teaspoon mixed pudding spice
Preheat the oven to 200°C/400°F/gas 6.
Put the apples with the golden caster sugar in a large pan. Cook for 5 minutes, till the apples have softened. Remove the heat and allow to cool a little.
In the meantime, place the cubed butter in a mixing bowl with the flour. Rub together with your fingertips until it resembles breadcrumbs. Then mix in soft brown sugar, oats and almonds to add a little texture.
Put the apples in a 25cm x 30cm baking dish and scatter over the top the crumble mixture. Bake for 25 to 30 minutes, till its golden and the tasty juices are bubbling.
