Dukkah and Avocado Bruschetta

1 carrot, shredded
Handful of green beans chopped into 1 inch pieces
Handful of cherry tomatoes, halved
½ small green papaya, shredded
3 bird’s eye chillies (or more if you’re brave)
1 ½ tbsp palm sugar
4 garlic cloves
2 tbsp lime juice
2 tbsp fish sauce
1 tsp Thai Seasoning Blend
Optional: roasted peanuts for garnish
In a mortar and pestle, add the chillies and garlic cloves. Crush until smooth.
Add the palm sugar, lime juice, fish sauce and Thai Seasoning Blend. Mix well.
In a salad bowl, combine the papaya, carrot, green beans and cherry tomatoes.
Pour the dressing over the salad and mix well.
Top with crushed roasted peanuts.
