Amchur, Aamchur or Amchoor Powder (Mango Powder) has a tangy flavour with sweet, fruity notes. Created by grinding dried slices of unripe mangoes, this powder has an extremely potent flavour and is also known as Mango Powder. Adored across India, Amchoor is traditionally added to vegetarian dishes to add a pleasant tartness to soups and stews.
The unripe mangoes used for Amchoor are selected for their sour flavour, sun-dried, and ground into a powder. Unlike other souring agents like tamarind, Amchoor has a subtler flavour and does not impart a strong fruity taste to dishes. It is a key ingredient in chaat masala, a popular spice blend, and is also used in marinades, rubs, sauces, and as a topping for various dishes. In addition to cooking, Amchoor has been used in traditional Ayurvedic medicine as a digestive aid.
Though typically associated with vegetables, Amchoor is a delicious addition to marinades to tenderise meat and fish. Use sparingly in dals, chutneys, soups, stews, pakoras and samosas for a distinctive sour taste!
