- Black Peppercorns (2tsp crushed)
- Extra Virgin Olive Oil (2tbsp)
- Lemon Juice (2tsp)
- Lemon Zest (2tsp)
- Nutmeg (½tsp freshly grated)
- Sea Salt (Crushed, to taste)
- Spinach Leaves (400g / 14oz)
1) Place the spinach in a large saucepan over a high heat and allow to wilt for one to two minutes.
2) Drain and squeeze out the excess water.
3) Mix the remaining ingredients together and toss with the spinach.
4) Season to taste and serve hot or cold.
