spicy, salty-garlic flavour. traditionally mixed with orange juice and garlic to make ‘recado rojo’ paste which is steamed or baked with chicken, pork or fish.
the traditional Mexican Yucatan paste – used in ‘pollo pibil’ and great as a rub before grilling or barbecuing.
directions: make-up as required -mix 4 tsp with 2 crushed garlic cloves & up to 2 tbsp of orange juice to form a spreadable paste.
