For the chicken:
4 chicken drumsticks
5 tbsp plain flour
2 tsp paprika
1 tsp cayenne pepper
2 ½ tsp salt
1 tsp black pepper
1 egg, beaten
2 tsp dried coriander leaves
Cooking oil
For the fried rice:
1 cup of boiled rice
Mixed vegetables of your choice (carrots, beans, peas, sweetcorn). Sliced and diced
4 garlic cloves, sliced finely
2 shallots, sliced finely
1 large onion, diced
2 tsp salt
1 tsp pepper
2 tsp turmeric
3 tbsp soy sauce
3 tbsp Kecap Manis (Indonesian sweet soy sauce)
1/2 pineapple chopped into chunks
1 chicken breast chopped into chunks
For the fried chicken:
Add all your ingredients (except the drumsticks, egg and oil) to a mixing bowl. Mix and combine.
Beat an egg in a separate bowl. Take a drumstick, dip and coat with the egg and then transfer to dry ingredients. Coat evenly and repeat for all drumsticks.
Deep fry in cooking oil on medium heat until golden brown.
For the fried rice:
In a wok, lightly fry the onions, garlic and shallots on a medium heat until golden brown.
Add the diced chicken and continue to fry until the chicken is cooked.
Add your chosen vegetables and cook for five minutes.
Add pineapple, rice, salt, pepper, Kecap Manis, soy sauce and turmeric. Mix well and continue to cook for a further three minutes before serving.
