Pimenton Picante, Smoked (Smoked Paprika)
Pimenton picante is fiercely smoky and spicy, made from the fiery red peppers of Southwest Spain. The peppers are oak smoked before the grinding process, which gives the powder its deep, smoky flavour. Traditionally the powder is ground in stone mills to retain its natural flavours. As well as pimenton dulce, pimenton picante has achieved a DOP status (Protected Denomination of Origin).
The Mediterranean’s super ingredient pimenton picante is essential for Spanish cooking and to make Catalonian stews and Romesco sauce. Try using with seafood, specifically for the tapas dish Pulpo Gellego (paprika octopus). Or, add to tomato-based dishes such as Bolognese, Chilli con Carne and sausage casserole.
