Mixed Leaf Seeded Salad with Avocado & Feta

Ingredients

A couple of large handfuls of mixed salad leaves - we used watercress and rocket

One ripe avocado, peeled and sliced

Handful of baby plum tomatoes, halved

Small cubes of feta cheese (we used feta in oil with chopped red peppers)

2 tablespoons Knead the Seed 5 Seed Mix

A little olive oil

A little Balsamic vinegar (optional)

Method

Put the salad leaves in a bowl.

Top with the sliced avocado, halved tomatoes, feta cheese cubes and 5 seed mix.

Drizzle with a little olive oil and Balsamic vinegar (if using).
