500g baking potatoes, peeled and cubed

1 can chopped tomatoes

1 onion, finely diced

3 garlic cloves, finely chopped

2 tsp Smoked Paprika

2 tsp Crushed Red Chillies

Olive oil

½ tbsp apple cider vinegar

Transport to Spain with this Patatas Bravas recipe, delicious!

For the potatoes:

Step 1:

Preheat your oven to 200°C. In a large saucepan of water, boil the potatoes together with ½ tsp of salt until tender

Step 2:

Drain the potatoes and tip them onto a baking tray

Step 3:

Sprinkle the potatoes with a pinch of salt and pepper, and douse generously with olive oil

Step 4:

Place the potatoes in the oven and cook for around 20-25 minutes until golden brown and the edges turn crisp

For the sauce:

Step 1:

Heat a dash of oil in a pan and cook the onions for around 10 minutes until soft and translucent

 Step 2:

Add the garlic and cook for a further 2 minutes

 Step 3:

Add the crushed red chillies and paprika, and cook for a further 1 minute

 Step 4:

Add the vinegar and the canned tomatoes, season with a pinch of salt and pepper and simmer for 15-20 minutes

 Step 5:

To serve, either top the potatoes with the sauce, or serve side by side and dip in as you like
