Method

1) In a heavy frying pan dry roast the black peppercorns, coriander seeds and white cumin seeds over medium to high heat for 1-2 minutes, until aromatic.

2) Allow to cool then grind and mix with all other ingredients.

3) Rub over meat or vegetables and allow to marinate for at least two hours – ideally longer (as long as you’ve got!) Add any leftovers to more olive oil to make a great salad dressing.
